Grilling Produce, Who Knew?

We’ve written numerous times this summer about grilling and tailgating meats of all kinds. During the summer (aka grilling season) there is really no mistaking the smell of a charcoal grill at a ballgame fired up to its’ hottest and the sound of crackling fire ready to cook someone’s favorite cut. However, what if I told you there is a growing segment of the population putting produce to the flame instead of a juicy steak. Some may call grilling produce blasphemy, you may call it delicious.

Grilling vegetables on the side has long been a practice of many pitmasters but a new trend in tailgating has been fresh produce by itself. Here are a few options we’ve found for the best grilled produce recipes online for you to try at your next game-day celebration, if you’re brave enough to try.

Grilled Corn
Shuck the corn and rub with olive oil. Grill on medium-high direct heat for 3 to 5 minutes, turning occasionally, until corn is charred.

Grilled Asparagus
Brush with olive oil and grill uncovered on medium-high direct heat for 4 to 6 minutes, turning occasionally.

Grilled Bell Peppers
Quarter peppers lengthwise and discard seeds. Toss with olive oil, salt and pepper; grill uncovered on medium-high direct heat for 3 to 4 minutes per side.

Grilled Eggplant
Slice small eggplants (about 8 to 12 ounces each) into rounds or lengths a bit more than a ¼-inch-thick. Brush both sides with olive oil and season with salt and pepper. Grill uncovered on medium-high direct heat for 3 to 4 minutes per side.
